Executive Chef and F&B Leaders from JABODETABEK and Banten Compete for The Archipelago Black Box Battle Trophy in Jakarta

Jakarta, July 25, 2024 - Archipelago International, the largest hotel management company in Southeast Asia, is once again holding the “Archipelago Black Box Battle” at Aston Kartika Grogol Hotel & Conference Center, Jakarta.

The Archipelago Black Box Battle has been held 8 times in various cities across Indonesia. The event on July 25, 2024, will feature 13 F&B Leaders and 163 Executive Chefs from Archipelago International hotel units in and around Jakarta.

The Archipelago Black Box Battle aims to enhance the skills and creativity of the Chefs and F&B Leaders by creating food and drink dishes using secret ingredients hidden in a black box.



The food ingredients used will be swordfish, salmon, and king prawn, and the drink ingredients will be agave syrup, orange, and tamarind.


In this event, judges from Archipelago International such as Winston Hanes as Vice President of Operations, A.S. Windoe as Corporate Executive Chef, Denny Wasana as Corporate F&B Manager, and Sari Kusumaningrum as Senior Director of Corporate Communications and PR, assess the participants involved. 



"We are thrilled to witness the extraordinary talent and innovation displayed in the Archipelago Black Box Battle. This competition not only showcases remarkable skills but also fosters camaraderie among our talented Executive Chefs and Food & Beverage Leaders," said Winston Hanes.


This event is a competition for the Chairman's Trophy from Archipelago International, awarded to the first-place winner by Charles Brookfield, and the CEO's Trophy, awarded to the second-place winner by John Flood, as well as the Favorite Winner Trophy for third place. In addition to trophies, winners receive certificates, cash prizes, souvenirs from Aston Kartika Grogol Hotel & Conference Center, and gifts from event sponsors.


In the Executive Chef category, the first-place winner was  Chef Iwan Irawan - Aston Serang Hotel & Convention Center, followed by Chef Sukma Nuryadinata - Grand Aston Puncak Hotel & Resort in second place, and Eko Priyo Utomo - Aston Kartika Grogol Hotel & Conference Center in third place.


Chef Iwan Irawan commented on their winning dish: “The Archipelago Black Box Battle was very challenging for me. This event is excellent for development as it hones chef’s skills in creating unique dishes.”.

In the Food & Beverage Leader category, Firman Maulana - Harper MT Haryono, Cawang secured first place, with Muhammad Sani - Aston Cilegon Boutique Hotel and Fathi Helmi - favehotel Padjajaran Bogor taking second and third places, respectively.


Firman Maulana as the first-place winner explained their winning beverage, “The inspiration for the drink I made comes from tamarind, which has a traditional Indonesian flavor. To all the participants, keep up the enthusiasm in creating your beverages!“.

A.S. Windoe, said, "The Archipelago Black Box Battle is not just a competition but also a platform that encourages chefs and F&B leaders to innovate and continually deliver their best creations, enhancing the quality of food across Archipelago International hotels."
